Passion fruit ice cream recipe

The strong punch of ruou in this passion fruit ice cream will draw out those fruity flavours, whilst creating an interesting and unique taste. Chef Tran Phuoc Hau has created the perfect recipe to cool you off in those muggy summer months.
Every passion fruit that goes into Son Tinh Chanh Leo is hand selected from farms in Da Lat in late July, when they’re ripe and full of flavour. The aromatic juices from the passion fruits are extracted using Son Tinh’s secret, natural methods, before fermenting into Son Tinh’s sticky rice liquor. The unique flavour of Son Tinh Passion Fruit is fruity, leaving a honey aftertaste on the palette.
 
The recipe calls for the highest quality cream, and the ripest passion fruits available, to bring out the taste of the ruou.

Ingredients:

  • 350ml whole milk
  • 500ml heavy cream
  • 100ml passion fruit
  • 30-50ml Ruou Son Tinh Passion Fruit
  • 200gr egg yolk
  • 250gr sugar
  • A teaspoon of vanilla
  • 500ml dry ice
 
 

Instruction:

Step 1: Start by heating the heavy cream, milk, Ruou Son Tinh Passion Fruit and passion fruit at around 70 degrees Celsius, then turn off the heat.
Step 2: Add the egg yolk, sugar and vanilla into a bowl then pour the above mixture into the mixture.
Step 3: Let the mixture cool to 35-40 degrees.
Step 4: Grind the dry ice into the ice cream mixture, then hand whisk until cool.
Once sufficiently frozen, share your passion fruit ice cream in ample portions to those around you (leaving the largest bowl for yourself).
