Already famed in Hanoi for unique custom cakes that look like they’d be more at home in an Andy Warhol exhibition, Sheereen Amran of BAKED has embodied the festive spirit in this Christmas-scented delightfully alcoholic jam.
Clearly no stranger to experimentation, Sheereen has created a confectionary concoction perfect for Christmas that’s heavily loaded with Vietnam’s finest rice liquor, Son Tinh Red Sticky Rice Strawberry Jam.
And what’s the Christmas period without a little extra alcoholic lubrication? So to get in the festive mood, she decided to throw in a quick Bellini cocktail recipe too.
Ruou Son Tinh Red Sticky Rice is completely versatile and this finely distilled red sticky rice liquor is the perfect way to draw out the rich flavours of the fruits.
So with that in mind, it’s time to learn how to turn Ruou Son Tinh Red Sticky Rice into boozy jam.  
 
Ingredients:
– 450g frozen or fresh strawberries
– 2 cups sugar
– 1.5 cups of Son Tinh Red Sticky Rice
– Zest of half a lemon
– Juice of half a lemon
– 2 cinnamon sticks
– 75g pectin (optional) for fruits low in pectin such as strawberries
To make a Christmas jam with Son Tinh Red Sticky Rice
Step 1: Place strawberries in a pot and leave it to macerate for 15 – 20 minutes
Step 2: Add lemon zest, lemon juice, cinnamon sticks, and Son Tinh Red Sticky Rice into the pot
 
 
Step 3: Place the pot on a medium to high heat until the mixture comes to a simmer. Stir frequently and scrape the bottom to avoid burning
Step 4: Once reaching boiling point, turn down the heat to medium-low and stir continuously
Step 5: You can either mash the strawberries or keep them whole, depending on your preference
Step 6: Your jam is ready when the mixture reduces, thickens, and boiling bubbles pop slowly
Step 7: In the end, you can add a little bit of pectin to thicken your jar if necessary. Cooking time should take about 30 – 40 minutes.
 
 
Once complete you can now bottle the still steaming jam into jars to present as gifts.
Sealing them while hot will help create a vacuum that will keep the jam fresh for months.
 
For those who can’t wait and are feeling peckish now, you can slather the jam on toast, scones, bagels or pretty much anything you desire.
 
Now comes the part we’ve all been waiting for – using Son Tinh Ruou Red Sticky Rice Jam to make cocktails!
We’re rapidly approaching that brief and beautiful time of the year where it’s acceptable to start the day with cocktails, so listen up if you want to impress your Christmas guests with your boozy breakfast this year:
– Add jam to a champagne flute
– Add a little bit of rosé sparkling wine
– Fill the flute with more wine and gently stir till white bubbles form on the surface
