This simple grilled fish recipe is brought to life by the intoxicating flavours of Son Tinh Passion Fruit.

What do we talk about when we talk about fish?

At Son Tinh, we take a traditional Vietnamese spirit and mix it with a modern, contemporary way of thinking.
So when we make fish, do we mean cha ca? Fish sauce? Mam thom?
None of it, actually. This fishy dish utilises our original ruou to create an indulgent dipping sauce, complimenting a succulent filet of sea bass.
This grilled fish recipe calls for just a half a cup of Son Tinh Passionfruit. We recommend enjoying the other half as you cook.

Ingredients:
  •       ⅓ cup of brown sugar
  •       ½ cup of heavy cream
  •       ½ cup of Son Tinh Passionfruit
  •       2 tablespoons of butter
  •       Filet of sea bass

Preparation:

Step 1: Mix ⅓ cup of brown sugar and ½ cup of heavy cream into a small, deep cooking pan.
Step 2: Simmer and stir until mixture is dissolved.
Step 3: While heating, gradually add ½ cup of Son Tinh Passionfruit.
Step 4: Simmer until the sauce is thick, add 2 tablespoons of butter when finished.
Step 5: Grill fish, adding sauce every 10 to 15 minutes. Once done, can use this sauce to dip your tender sea bass.
Step 6: Enjoy perfect dinner night!
